Turkey Jambalaya

Looking for a way to use up some leftover turkey? I made this on Sunday and it was delicious! It makes a huge amount, so take that into consideration if there are only 2 of you eating:)

As written: 1 1/2 cup per serving
Calories 300, fat 6g, fiber 4 g

1 cup uncooked brown rice
3 cups water
1/2 pound turkey kielbasa, sliced
2 cups leftover turkey meat
1 green bell pepper, chopped
1 medium onion, chopped
3 celery stalks, chopped
3 cloves garlic, chopped
1 (15oz) can tomato sauce
2 (15oz) can diced tomatoes
1/2 pound peeled raw shrimp

spices:
1 1/2tsp dried basil
1 1/2 tsp dried thyme
1 1/4 tsp paprika
1/2 tsp oregano
1/8 tsp black pepper

1. Combine rice and 2 1/2 cups water in saucepan. Bring to boil , then reduce heat to low. Cover and cook about 35 minutes until water is absorbed and rice is tender.

2. Spray a large saucepan with nonstick spray and heat pan over medium high heat. Add kielbasa, turkey, and vegetables; saute about 6-7 minutes. Add seasonings and stir well. Cook 2 more minutes.

3. Add tomato sauce, diced tomatoes and 1/4 cup water to saucepan. Bring mixture to a boil, then reduce heat and simmer for 5 minutes. Add shrimp and simmer 5 more more minutes.

4. Adjust seasonings and add cooked rice to desired consistency.


As I was writing it for you today I realized I was supposed to add 2 cans of diced tomatoes- I only added one, which made it thicker, so in turn I only added about half of the cooked rice. It didn't seem to make a difference in flavor one way or the other. If you were feeding a crowd, then the extra tomatoes and rice would stretch it a bit.
