What's in My Box?

I cut the pits out of a batch of cherries and will have several pounds in the freezer  for smoothies. Thanks for the tip Juliann!

Here's my produce box for the week.
Kohlrabi
cucumbers
tomatoes
red baby beets with greens
carrots
chard
garlic scapes. I tried to make a pesto out of this last year and it was too strong. I'm opting to put them with my trimmings and make vegetable broth for soup.

What's in My Box?

I've been getting plenty of produce but now that I've been showing you my box for awhile it is going to start getting repetitive.

I am loving all the fresh spring greens! In the bag is a salad mix, the butter lettuce is amazing as well. Fresh Oregon berries are great right now and I can never get enough.

What's in My Box?

I've been out so many evenings I've hardly had a chance to cook. I really do like to cook dinner for my husband- he has been working 70 hours a week and this is one thing I can do for him. He never complains either, which is a bonus! 

He isn't a big greens eater, which we know the produce boxes come on strong with greens in the spring. Here I have beautiful rainbow chard, butter lettuce and kale sprouts. The chard I'll use in smoothies, the butter lettuce will make an awesome salad and the kale sprouts I'd like to try and bake.
I also have potatoes, beets, shallots, and a bunch of green garlic. Pot roast is on the menu this weekend. I like that because we usually have leftovers which can easily be eaten on a busy weekday night.

Cabbage Rolls

Remember my last produce box? My neighbor gave me the suggestion to make cabbage rolls. (she got the same produce box)

She uses these wraps.  There is about 20 in a package. 

I browned 1 pound of ground beef with garlic. While that cooked I used my food processor to shred the head of cabbage,  about 1 cup of carrots and one onion. I added it to the browned hamburger. I also added soy sauce, ginger and salt and pepper to taste and cooked it until starting to get soft. 

Here's my filling. 


I filled and wrapped them according to the package directions. I used the whole package and all of the filling. 

I baked them about 15 minutes in an oven that was preheated to 425 degrees. I calculated the calories to be about 100 per roll. Hubby and I both loved them!
You can vary the filling depending on what you have on hand.

This was my first time making cabbage rolls and it was so much easier than I expected.

Do you Like Cabbage?

I've never been a big fan of cabbage, until recently.

Since I've been getting organic, Oregon grown produce boxes, I've experimented with cabbage and now am quite happy eating it. I made egg rolls last night! My produce box contained cabbage, carrots and onion and it was the perfect mixture to start.
My friend and young mom turned me on to making them and I couldn't be more surprised at the results. I put most everything in my food processor to chop it, and that was the messiest step.
I'll post how I did it soon.
For now, look at the great benefits of cabbage!

What's in My Box?

Okay, I actually ordered the mixed salad greens, but everything else came in my box:

Cabbage
onions
red potatoes
mini spaghetti squash
carrots (lots and lots, not pictured)
fresh tumeric, which smells like dirt. LOL

I'm not sure how to use the tumeric and I haven't had a chance to look it up.

Can't wait for early spring veggies.

Criss Cross Applesauce

Last time I shared my produce box on this blog I had a small bag of apples. Well, I do know apples are not being harvested right now, so I figured they had been stored for awhile. I really only like crunchy and crisp apples so I made some home made applesauce with them. I cook them until they are soft, then use a potato masher and add a little cinnamon. Delish!!

You can use this fresh applesauce to bake too!!

Love Em or Hate Em

Brussel sprouts! You are on one side or the other when it comes to this veggie. The way I like to cook them is in my cast iron pan in a hot oven tossed with garlic olive oil with a sprinkle of coarse salt and freshly ground pepper.

I'm still getting produce and this is what I got this week.

I thought the other bunch of greens was arugula, but now I'm not sure. It isn't bitter but very mild.

What's in my Box this week?

I'm leaving for a week so am doing my best to eat up the fresh produce since hubby would rather cook up a steak or frozen pizza while I'm gone and not mess with fresh veggies.

I am volunteering to pick up produce in a neighboring town every other week and that means free produce! I'll drop it off at the pick up place in my town. 
Here's my produce this week. Does anybody know what kind of squash that is? I looked online and may need to cut into it to figure it out. I'm thinking spaghetti squash

What's in my Box?


My produce box looks similar to last week. I learning to love the root veggies and squashes.

I've got a big turnip this week. I'll use that in a stew along with the red potatoes and peppers.
I believe the squash is an acorn, although this week mine has little warts on it.  I'd love to hear your favorite way to prepare your acorn squash.

We are still harvesting tomatoes in Central Oregon, which is crazy! 
Swiss chard will be used in my smoothies and I order the field greens separate which I'll eat every day for dinner. 

I've been focusing on whole, real food, but also seem to be fighting water retention, which I think is related to hormone changes. It's frustrating but I'll stay the course.
