Monday Morning Plan

 It feels great to have a plan and ready to get back into healthy eating!
Used my Nutribullet to make my morning smoothie: spinach, banana, pineapple,strawberry, blueberry, coconut water, a little chia seed and protein powder.  It doesn't seem to matter how I change up my smoothie too much it always works out to be about 300 calories.
I baked a few ingredients last night to have handy- butternut squash, sweet potatoes and beets.

My ankle is still bothering me a bit, but am at least hoping to go for a walk to test it out.

Let's make it a healthy week!


  1. Awesome! Looks like what I did yesterday, roasted beets, butternut squash, made a batch of quinoa. Have a great week of healthiness, and take it easy on your ankle!

  2. I make a smoothie that is almost exactly like that. Yummy! Unfortunately it is difficult for me to drink a cold smoothie when the temps are below freezing like they are this week. Too cold! So for now it is overnight steel cut oats.

  3. Wow that looks yum! I go for all greens in mine. Hope your ankle is ok after a walk.

  4. Looks yummy except for beets. Is need a substitute. Hope your ankle is better. Do give it time to heal
