It's a Soup Day!


I woke up to snow today and about 3:30 this afternoon it has finally stopped. (update: it's 4:30 and has started snowing again) I think it is a great day to post Cream of Potato Soup recipe. If you have the monthly pass or etools you can get all the nitty gritty at the Weight Watcher site. I am not going into a lot of detail about size of pan, etc. I'm keepin' it simple.


Cream of Potato Soup

Serves 6
1 1/2cups serving
3 WW points

Heat 2 tsp. olive oil in a stockpot over medium-high heat. Add some chopped onions and 3 minced cloves of garlic. Saute until soft. Add 1/3 tsp dried parsley, 1/3 tsp tarragon, 1/3 tsp chives. (or just put in a pinch of all three- no measuring necessary) Cook about 1 minute, stirring.

Add 4 medium potatoes that have been peeled and cut into 1/2" cubes (that's about 2 pounds) and 4 cups chicken broth. Bring to boil, then reduce heat, partially cover and cook about 10 minutes or until potatoes are fork tender.

Puree about 4 cups of potato mixture until smooth. (this part is pretty essential as this is how it ends up creamy) Return puree to pot, and add one 12oz can fat free evaporated milk and cook until warm. Season with salt and pepper and enjoy!
