Oregon had such a bumper crop of great blueberries this year- my freezer is full of them. Here's one more favorite recipe of mine. You can also store these in the freezer until you are ready to eat them.
Makes 12 muffins

1/2 c. oatmeal
1/2 c. orange juice
1 c. whole wheat flour
1 c. whole wheat flour
1/2 c. wheat germ
1/2 c. sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/4 c. canola or vegetable oil
1/4 c. unsweetened applesauce
1 egg, slightly beaten
1 c. fresh or frozen, thawed blueberries
Heat oven to 400. Grease 12 muffin cups. (I use Pam) In a large bowl combine orange juice and oats; stir well. Add flour, wheat germ, 1/2 c sugar, baking powder, salt, soda, oil, applesauce and egg. Mix well. Fold in blueberries. Spoon into muffin cups about 2/3's full. Blend 2 TB sugar and cinnamon; sprinkle over batter. Bake 18-22 minutes.
