Best Bran Muffins

What a great way to send your kids off to school. Make some healthy muffins, store them in the freezer, then microwave about 1 minute and ta-da a simple after school snack or part of a healthy breakfast.

Best Bran Muffins
Makes 24
2 WW points

1 1/2 cups old fashioned oats
1 c. All- Bran cereal
1 c. boiling water
1/2 c. sugar
1/2 c. packed brown sugar
1/4 c. butter or margarine, melted
1/4 c. unsweetened applesauce
2 eggs, beaten
1/2 c. wheat germ
2 1/4 c. whole wheat flour
2 1/2 tsp. baking soda
1/2 tsp. salt
2 cups reduced fat buttermilk

Place oats and cereal in bowl; cover with boiling water. Let stand for 5 minutes. Stir in sugars, butter, applesauce, egg and wheat germ; mix well. Combine the flour, baking soda and salt. Stir into oat mixture alternately with buttermilk just until moistened. Fill greased muffin cups two-thirds full. Bake at 375 for 18-20 minutes.
