What's in My Box?


Gorgeous! This was in my produce box this week.

Early Oregon Strawberries: Already eaten, plain, sweet, yum. 
Field Greens- salad, wraps
Kale- Smoothies (I'd like to branch out here, any ideas?)
Baby Bok Choy- I'll add some to my salads this week, but will try them in soup too.
Radishes- salad, snacking
leaf lettuce- wraps, salads
Rhubarb- I have no idea how to use these. Any ideas?

  1. I put chopped kale in my soup. The warm soup softens it up. Also good in an omelet, sauté with some onions and mushrooms.
    I get my first box next week!

  2. Rhubarb -Google for recipes. Rhubarb crisp with ice cream is great. You can make jelly (preserves), but probably don't have enough. It takes a lot of sugar. I use kale in soups. I have a kale lentil soup and a recipe I made up myself. Google for recipes until you find what you might like. I've had to do a lot of that with my restrictive diet.

  3. I like kale sautéed with a little olive oil and garlic. And although I've never eaten them, I'm going to attempt some kale chips. I've heard they are delicious!

  4. I make kale chips pretty much every week from my box, also crockpot it with chicken and onions. I can email you more specifics, if you want. Rhubarb, the only things I know to do with it are FULL of sugar, as in pie or crisps!

  5. You could use the rhubarb as you would use celery. You can try to finely chop it with a mandoline chopper and add it to a salad; I think as long as you add a little bit of lemon juice in your salad, you should have your 2 bitter ingredients.

    2. Rhubarb... peel the stalk if it is not tender, , sprinkle a little salt on it, and eat it raw! LOVE it, too bad it is not a year round treat :)
      When I was eating sugar, I would make a sauce out of it, sometimes with strawberries, and put it over pound cake or ice cream.

  6. My husband loves rhubarb. We used to grow it. His favorite way to eat it was rhubarb sauce. I made it like applesauce.     1. Right now I'm avoiding any added sugar, but I wonder if I could cook it with apples and make a natural apple/rhubarb sauce, sprinkled with cinnamon. Thanks for taking the time to comment.

  7. Rhubarb pie is excellent!... Also , it can be cooked like applesauce....I miss rhubarb---we grew it on the farm I was raised on, but I haven't had it in years...enjoy!
