Taco Soup for chilly days

Here is one of my favorite cold time recipes. Super simple and delicious!

Taco Soup
Makes 12, 1 cup servings, 3 points per serving

Brown 1 pound very lean ground beef. (while you are at it you can brown more then freeze the rest for a later meal) After ground beef is brown add 1 package taco seasoning mix and 1 package dry ranch dressing mix. Stir to combine. Toss this into a crockpot then add: 1 16oz can undrained kidney beans, small can of drained corn, 1 16oz can diced tomatoes with green chilies, 1 16oz can diced tomatoes, and 1 can no-fat, low sodium chicken broth. Stir to combine.
Crank crockpot on high, leave for work, and it'll be ready whenever you are.
You can add some lowfat cheese on top, avacodo, or chips, but be sure to count the points for it.

  1. Sounds yummy! Keep the recipes coming. I especially love crockpot recipes as it's gets the ingredients in there and gets me out of the kitchen.. no chance of taking tastes every now and then that can easily add up to extra points! I'm trying for one of my meals each day to be a soup of some sort, this one is going to be a must try :)
