Chocolate Pudding Cake

I've posted this on my blog before but it is so good it is worth a repeat. Nobody even needs to know it's only 165 calories per serving!!

Warm Chocolate Pudding CakeServes 9
Nutritional Info: 165 calories, 2 g fat, 2 g fiber


3/4 cup all purpose flour
3/4 cup granulated sugar
1/3 cup + 1/4 cup unsweetend cocoa powder
2 tsp. baking powder
1 tsp instant coffee powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup low fat milk
1 TB butter, melted
1 1/2 tsp vanilla extract
1/3 cup packed brown sugar
1 2/3 cups boiling water

  1. Preheat oven to 350 degrees. Spray a 9" square baking pan with nonstick spray.
  2. Combine the flour, granulated sugar, 1/3 cup cocoa powder, baking powder, instant coffee powder, baking soda, and the salt in a large bowl. Make a well in the center and pour in the milk, melted butter and vanilla. Stir just until blended; spoon the batter evenly into the pan.
  3. Combine the brown sugar and the additional 1/4 cup cocoa powder in a small bowl. Sprinkle evenly over the batter. Gently pour the boiling water in a zigzag fashion over the top; do not stir. Bake until the top of the pudding is set, about 35 minutes. Cool on a rack at least 30 minutes. (if you can wait that long!) Cut into 9 squares and serve warm.

  1. I have been depriving myself lately and that just makes me want the "bad" stuff all the more so that when I do finally cave, it will be big time. I am thinking I need to make some cookies today. I can give most of them away for Valentine's day but have just a little treat for myself.
    Why do I always think it has to be all or nothing?
