Seems I'm late to jump on the roasting vegetables bandwagon. This weekend was my first time roasting broccoli! It was delicious!

I tossed my washed, chopped broccoli in a bowl with a little olive oil, garlic, salt & pepper and then spread it out on a baking sheet and pop into a preheated 425 degree oven and bake for 15-20 minutes, tossing frequently.

I love roasted Broccoli...and I also do Zucchini that way. I tried Cauliflower, but I can't stand the smell.
